Simply the sweetest delicacy you can spread on your morning toast!
It’s become one of my favorite springtime rituals gathering wild violets in the woods. Violets are a harbinger of spring with their cheerful purple faces dotting the wooded banks and hillsides, emerging from heart shaped leaves. Many a year my daughters and granddaughters have helped as it’s a time consuming process to fill a basket with enough to make a small batch of 10 jars.
Then the magic begins..an infusion or ‘tea’ is made which turns into a deep blue color. Lemon juice is added which transforms the color into a rich magenta, then simply sugar and pectin are added to thicken and then ladled into small jars.
The flavor is delicate and grapelike and the hue is a delicate pink. Delicious on English muffins or sourdough toast.
